What would a nice butter chicken be without fragrant rice? Ok, sure, it would be even better with a piece of Nan bread but I’m not motivated enough to make home made Nan bread… that would be crossing the line! So I stick to rice!!! One of the key ingredients in this particular rice is the ghee. Ghee is roughly clarified butter although it has a very different taste than traditional clarified butter as you have to let the butter and the milk solids simmer together so that they caramelize, which gives it a very distinct aromatic flavor. You can find ghee in traditional supermarkets, as “international” ingredients are more and more accessible. Then you’ve got to add the black mustard seeds, often used in Indian cuisine. And of course, the saffron adds an amazing aroma. I really really love saffron in rice!
Fragrant Indian Rice Serves 4 people - Preparation: 5 minutes – Cooking time: 20 minutes - Level : KID
INGREDIENTS
1 cup jasmine rice
2 cups water
1 tbsp ghee
½ tsp saffron threads
1 tsp black mustard seeds
½ tsp salt
PREPARATION
In a saucepan combine all the ingredients. Bring to a boil uncovered. Reduce heat to low, stir and cover. Let simmer for 15 to 20 minutes.
